Chef Alana Reyes built Foundry around a custom 12 ft hearth that burns Michigan oak and cherry. Almost everything on the menu touches the fire at some point, from the morning eggs to the grilled peaches at dinner.
She buys whole animals from two Illinois farms and changes the dinner menu with the Green City Market season. Ask for a counter seat to watch the kitchen work.
